If you have food allergies, particularly an allergy to wheat, then you know how difficult it is to shop at Trader Joe’s without wishing you could eat everything there that contains wheat.
One of those items just so happens to be their Cowboy bark.
Which is why I decided to make my own version. . . and here it is:
What you’ll need:
Chocolate Chips (I used a whole 10 oz. bag)
Gluten-free Joe Joes
What to do:
Step 1. Lay wax paper down
Step 2. Melt chocolate at 30 second intervals until it’s completely melted
Step 3. Spread chocolate over wax paper
Step 4. Roast pecans (the cowboy bark has almonds, but pecans are just better) at 350 degrees fahrenheit for a few minutes and place on top of chocolate
Step 5. place the rest of the ‘toppings’ onto the melted chocolate – pieces of gluten free pretzels and gluten free Joe Joe’s (TJ’s version of Oreos), toffee, and anything else you can think of.
Step 6. Let the chocolate harden (doesn’t take too long, approx. 30 minutes)
Step 7. Cut into pieces of deliciousness and stuff your face
